Chickpea Protein Bites

 

As a vegetarian, I am always looking for ways to incorporate more plant-based protein into my day. I have made many different kinds of protein balls before, but this was my first time experimenting with chickpeas. Not only does it provide a great base for consistency and texture – it adds a ton of protein!

These took no time to throw together – so worth the 15 minutes from start to finish (clean up included!)

You can get creative with any additional mix-ins and also if you want to top the bites with anything at the end. For example, I rolled half of the bites in coconut flakes after I formed them into balls.

In need of an easy and delicious grab & go snack?! These are perfect for pre or post workout fuel.

 

INGREDIENTS:

  • 1 cup cooked chickpeas, drained and rinsed
  • 1/2 cup rolled oats
  • 1/2 cup all-natural creamy almond butter
  • 1/4 cup maple syrup (drizzle in more to taste if needed!)
  • 2 tablespoons ground flax seed
  • 1 tsp vanilla extract
  • a good pinch of sea salt
  • 1/3 cup mini chocolate chips

DIRECTIONS:

  • Mix chickpeas, almond butter and maple syrup in food processor until fully blended
  • Add oats, flax, vanilla and salt and blend
  • Check consistency with spoon. It should be a dough-like consistency. If too crumbly add a little more almond butter or if its too thin add a little more oats.

 

  • Transfer to a bowl and stir in chocolate chips and then refrigerate for about an hour.
  • Scoop out dough and form into small balls – this is when you have the option to coat balls in any extra toppings you might want! Coconut or hemp seeds work really well!
  • Store in fridge to hold form best.
