In the summer, it’s all about grilling! Nothing beats the flavor of food fresh off the grill. I love the versatility of the grill. First, it’s easy clean up and second, you really can put anything on the grill from vegetables to potatoes or any kind of meat or fish. Once you master the art of grilling, you’ll be hooked.
One of my absolute favorite meals are my Greek Inspired Beef Kabobs and Greek Salad. An incredibly flavorful dish that’s perfect for a quick low-carb summer dinner but at the same time “fancy” enough to serve guests at a barbecue if you want to show off a little 😉 The lemon zest and oregano are a simple yet unique combination that really brings these kabobs to the next level.
Pair the kabobs with your favorite tzatziki (a yogurt dipping sauce found in most grocery stores) and a scoop of the fresh Greek Salad and you have yourself an insanely delicious and healthy meal.
Ingredients
Ground Beef Kabob
1 lb lean ground beef
½ cup whole wheat breadcrumbs
1 tbsp dried oregano
Zest from 1 lemon
1 egg
1 tsp kosher salt
½ tsp black pepper
Greek Salad
½ cup diced seedless cucumbers
½ cup diced tomatoes
½ cup diced diced red onion
½ cup diced red bell pepper
¼ cup fresh chopped parsley
½ cup crumbled feta
1 tsp fresh or dried dill
2 tbsp fresh lemon juice
Drizzle of olive oil
Salt & Pepper, to taste
Instructions
For the salad, simply combine all ingredients and place in refrigerator to allow flavors to marry while you prepare and cook the kabobs.
To prepare the ground beef kabobs, combine all of the ingredients and mix to combine. You never want to over-mix ground beef or it becomes tough when you cook it. Next divide the mixture into 6-8 log shaped kabobs about 3-4 inches long. Place on preheated grill and cook approximately 4 minutes per side. Pair these kabobs with your favorite store-bought tzatziki and some of the Greek salad.
