I have to say, I knocked this one out of the park and if I’m being honest, it was a completely accidental recipe!
I had something entirely different planned for dinner and realized I bought the small shrimp instead of the large shrimp and they wouldn’t work for the recipe I had wanted to make. Oops! Thinking on the fly and starving after the gym, I worked with some ingredients I had in the fridge and pantry and came up with this delicious healthy shrimp fried brown rice.
This shrimp fried brown rice is a perfect way to use up leftover rice. Another tip for making this recipe a quick weeknight meal is by using the Trader Joe’s frozen brown rice. You just pop it in the microwave for 3 minutes and you have perfectly cooked brown rice. This is a great option if you don’t have any leftovers and also don’t want to spend the 45 minutes it typically takes to cook brown rice. Also, if you haven’t tried coconut aminos, you need to. It’s a great low sodium, healthy alternative to soy sauce.
This recipe is simple and delicious and tastes like you just got it delivered from your favorite local restaurant.
Ingredients:
- 1 pound 41/50 count shrimp, peeled and de-veined
- 4 cups brown rice, cooked
- 2 eggs, whisked
- ¼ cup coconut aminos (or low sodium soy sauce)
- 1 tbsp sesame oil
- 2 tbsp ginger paste or fresh grated ginger
- ½ cup frozen peas
- ½ cup scallions, chopped in 1 inch pieces
- Salt & Pepper
- 2 tsp avocado oil
Instructions:
- Mix coconut aminos, sesame oil and ginger in a bowl and set aside.
- Heat avocado oil in a large saute pan. Season shrimp with salt & pepper and add to pan.
- Cook the shrimp for 1 minute on each side.
- When shrimp is pink, add cooked brown rice, peas and scallions and sauce to pan and mix until all ingredients are incorporated.
- When the rice and shrimp is thoroughly mixed push the mixture to one side of the pan.
- Add the eggs to the pan and mix the eggs until they are scrambled but still slightly wet and then stir the eggs into the rice and shrimp mixture until everything is completely mixed.
- Serve and enjoy!
