Vegan Spinach Walnut Pesto
Back in January I participated in the Fixx360 workout/nutrition/self care program rolled out by SweatFixx. It was a 4-week program geared at changing your mindset towards nutrition and creating healthy habits, not just with food but with all aspects of your life. If you haven’t tried the program yet, I highly recommend it!
During the program one of our challenges was to remove dairy from our diet for a week. I thought to myself…no cheese? What kind of torture is this?!? However, I accepted the challenge and used it as an opportunity to explore some new ingredients. Molly, one of our fantastic Sweat Fixx instructors, posted in our group about Nutritional Yeast. I had never really heard of nutritional yeast, but after a quick google search I was intrigued.
I read an article about how to incorporate nutritional yeast as a substitute for parmesan cheese and that really got my wheels turning! As a lover of pesto, I knew I wanted to create a recipe for a healthy, vegan version of pesto! You have to check out my Vegan Spinach Walnut Pesto!
Don’t be scared to try something new! You just might surprise yourself.
Ingredients:
2 big handfuls organic baby spinach
¼ cup walnuts *
¼ nutritional yeast
¼ avocado oil
Juice from half a lemon
Salt & Pepper
Instructions:
Add all ingredients, except for avocado oil in a blender or food processor. Pulse and add avocado oil a little at a time until you reach a smooth, creamy texture. Scrape the sides of the blender or food processor as needed as you pulse.
*I chose to use walnuts because I like them. You can really substitute any other nut you like (pinenuts, cashews, almonds, etc).
